Booze-Infused Smoked Salmon Success - From Garden Hobby to Seven-Figure Artisan Brand-

British artisan food brand The Pished Fish has officially surpassed £1 million in annual revenue for the first time, cementing its position as one of the UK’s most distinctive gourmet smoked salmon products.

Renowned for its booze-infused, Scandinavian-style cold smoked salmon slices, the company has carved out a unique niche in the premium food market with its rebellious, ‘Rock & Roll’, flavour-forward approach to a traditional delicacy.

What began in 2014 as a passion project — “smoking salmon in a glorified filing cabinet in Camberwell” — has now grown into a thriving, full-time business. Founder James Eagle was selling his hand-cured salmon at a London farmers’ market when he was spotted by a Selfridges fishmonger. The resulting orders prompted James and his wife to relocate from London to East Sussex in 2017, scaling-up production and establishing a dedicated smokery and headquarters in the South Downs.

Today, The Pished Fish employs eight full-time staff and continues to experience strong growth, particularly across its direct-to-consumer channel, which accelerated significantly during the pandemic and continues to do so.

Founder, James Eagle commented, “Travelling around Scandinavia when I was younger made me realise that smoked salmon deserves to be the main focus of a dish like Gravlax, and not the sideline. Smoked salmon is big business, but I’ve always wanted to do it differently. When I launched The Pished Fish, I never imagined it would ever be so popular. It proves that people are hungry for quality food with personality, that stands out and tastes exceptional.”

The company sources premium Atlantic salmon from RSPCA or ASC assured farms, reflecting its commitment to responsible farming and quality.

Expanding beyond smoked salmon slices, James also developed Gilltong (a world-first), a fish-based take on biltong, available in Teriyaki & Honey and Tikka & Mango flavours, born from creative experimentation in the smokery. A premium smoked salmon pâté also features in the range.
